5/365 Bruschetta

Hiyaa!  This year, one of my goals is to choose healthy food options.  I am attempting to really cut down on my rice consumption since I grew up eating everything with rice... even chips, especially shrimp chips dipped in spiced vinegar (craving some right now, I knew I shouldn't have put that on writing).  

Anyway, I thought I'd share with you what I ate for lunch today.  


Smoked Salmon Bruschetta


Ingredients:  
Sliced smoked salmon
2 roma tomatoes (chopped)
olive oil, 
salt and pepper 
fresh basil leaves (chopped)
small wedge of lime
French bread (sliced diagonally)

How to:
**If you don't want your bruschetta to be watery, Cut your tomato in half and squeeze out the juice and the seeds, then chop it.  

Mix chopped tomatoes, basil leaves, 2 tsp. of oilive oil, squeezed lime wedge, and mix it all up.  Add salt and pepper to taste.  While mixing, toast your sliced bread.  Place the smoked salmon on a slice of bread and top it with your easy peasy bruschetta and enjoy!

if you can't find smoked salmon easily in your are, sliced turkey would also taste great.  My husband likes to melt pepperjack cheese on his slice of toast first before stacking the rest.

  1. I love brushetta! My friend makes it w/ just the veggies...and I love tomatoes, so it's really yummy to me!
